We’re looking for an experienced Restaurant Manager who leads with heart, clarity, and high standards. Someone who understands that great service is built on team culture, attention to detail, and a seamless connection between FOH, BOH, and Bar.
Callao invites diners to encounter Nikkei, a Japanese-Peruvian cuisine melting hearts across the globe. This is food inspired by the elements and ignited by two cultures who came together to create something remarkable. Callao combines classic ingredients and intricate techniques to create dishes that are at once diverse and intriguing, familiar yet unknown. With an extensive wine list and cocktails that infuse tastes from Tokyo to Lima.
About the Role
You will be responsible for the day?to?day leadership of the restaurant, ensuring every guest feels welcomed, cared for, and impressed. This role suits a manager who thrives in a fast?paced environment, builds strong teams, and takes ownership of both the guest experience and operational excellence.
Key Responsibilities
Lead, train, and inspire the FOH team to deliver exceptional service
Maintain high standards of venue presentation and atmosphere
Oversee daily operations, including reservations, floor management, and guest relations
Work closely with BOH and Bar to ensure smooth service and strong communication
Manage stock control, ordering, and cost awareness
Support recruitment, onboarding, and ongoing staff development
Uphold company policies, safety standards, and a positive team culture
Drive revenue through upselling, guest engagement, and smart service strategies
About You
Proven experience as a Restaurant Manager or Assistant Manager
Strong leadership skills with a focus on team unity and accountability
Excellent communication and problem?solving abilities
A natural host with a passion for creating memorable guest experiences
High attention to detail and pride in venue presentation
Ability to stay calm, organised, and supportive under pressure
Understanding of stock management, rostering, and basic financials
