What more do you want, Restaurant Manager: Scope and Purpose of the Job, The job incumbent is responsible for the efficient operation of The Islands Restaurant and bar at the President Hotel in Bantry Bay, to require checking occupancy forecasts and to anticipate volumes of business and schedule staff accordingly. To be responsible for the control of food and beverage stocks, maintenance and cleaning of the restaurant operating equipment and stocks.

Responsible for staff training.

Duties and Responsibilities: Ensure that the restaurant is clean at all times and that sufficient mise-en-place and food and beverage stocks are available. Supervision and control of waitrons is maintained ensuring prompt, professional and courteous service at all times. Ongoing training to meet SOPs is maintained. Billing documentation is completed accurately by staff with correct names, signatures and posted correctly. Liason is maintained between The F&B Manager, his/her assistant and the Executive Chef. A high standard of Guest liaison is maintained and that complaints and compliments are dealt With immediately and efficiently. Control is maintained over all stock in terms of being timeously requisitioned usage and cleaned. Work area of point of sale is clean and hands over procedures are correctly completed. Cash float is checked on a daily basis. Staff development – Meetings to be held weekly for effective communication, Good cocktail and beverage knowledge. Fully functional on Micros POS.

Requirements: Matric certificate. Wine focused ( sales, menu, tasting), Previous experience in a large high quality operation/Hotel an advantage, Must have excellent bar and restaurant understanding, Evening shifts, Self motivated, Good communication skills. Strong leadership qualities, Pleasant disposition, Computer literate
