Good understanding of food and wine trends knowledgeable in creating, implementing and maintaining written control documents. Good understanding of stock procedures and control. Good knowledge of planning, budgeting, and departmental administration. Experienced in functions and events. Valid Driver’s License. Knowledgeable of all dietary and religious requirements.

Description: Ability and willingness to train, mentor, manage and continually improve the kitchen team. Interpersonal and communication skills are essential. Leading and training the kitchen staff in line with the property food directive, ensuring food preparation to the highest standard. Menu compilation and implementation. Effective Kitchen Administration to minimize shortages and wastage and effective stock control, assuming full responsibility for any shortages, wastage, and variances. To manage and monitor all costs and implement measures to control them.

Attention to detail, analytical thinking, problem-solving, decision making, and time management are essential. Supervision of kitchen staff.
