Strong leadership with the ability to motivate and drive the kitchen team forward. Experience in stock control, purchasing and GP margins. Be committed to ongoing staff training and promoting a culture of internal development. Role - Accountable for daily operation of the kitchen. To design and cost menus; created with a modern yet classical French outlook, generating targeted gross profits. Effectively manage the kitchen team.

Have a strong understanding of the financial structure of the business.

To have knowledge of, and certification for the highest standards of health and safety, together with hygiene and to be able to establish and maintain monitoring systems within the workplace. Establish and maintain strong, effective relationships with front of house and suppliers, including sourcing local producers To be able to work alongside the Sous chef, front of house managers and the owners in growing the business. Own transport essential.
