Permanent Experienced Butchery Manager, Other, Northern Suburbs. A well-known family store situated in the Northern Suburbs of Cape Town is looking to employ an experienced Butchery Manager to supervise the operation of the Butchery according to agreed sales and profitability targets.

Responsibilities: Manage butchery targets and profitability. Control Stock. Buying, Point of Sale and Pricing, Product Ingredients and specie, Hygiene and Housekeeping, Manage Staff, Manage Customers, Open & close store, Cutting skills of all species, Management / Supervisory skills, Negotiation skills, Interpersonal skills, Analyze the profitability of the butchery.

Knowledge: Product knowledge. Cold chain management. Production planning. Meat cutting techniques. Block tests and costing. Butchery department profitability. Industrial Relations. Quality Indicators. Ordering. Sanitation control. Meat and poultry cooking methods. Butchery trends.

Experience & Qualifications: At least 5 years’ experience in all aspects of day to day running and managing of a meat market. At least 2 years of retail experience in fresh foods departments.
