Bakery Manager, Johannesburg, Company Name: NUDAWN. Bakery/Food Production Manager. A bakery in Selby, Johannesburg is looking for a bakery manager. Must be able to work long hours, weekends and public holidays. Must be able to control large volumes. Minimum 5 years experience in a management position. Must have own transport.

Duties include: Staff supervision - Store Man (Raw Materials), Supervisor(s), Team Leaders, Production staff. All admin concerning attendance records; Bakery Manager; Training of new staff and follow-up training. Supervision and adhering to Food Safety & Quality regulations, policies, and procedures according to Regulations and Bakery Food Safety System.

Supervision regarding – protective clothing, hygiene, adhering to rules, policies and procedures, health & safety, daily running of workflow, first & second level staff communication reporting to the General Bakery Manager and Quality Manager. Managing all stock: raw materials as well as finished products. Control stock taking of raw materials and weekly/monthly order. Control all finished stock – getting figures from the production floor and logistics. Control orders going out and timeously – in co-operation with Logistics. Control of reject stock. Daily Production: In control of daily production. Production Planning. Able to manage production to keep the workflow as effective as possible.

Excellent control over quality of products – signing off final product. Food Safety System. The Production Manager will be a Member on the HACCP Team, the Quality Manager / Team Leader on the HACCP Team, and the Gen. Bakery Manager on the HACCP Team, forms the core of Bakery’s Food Safety Management Systems. The Production Manager controls all the FSMS documentation that needs to be completed daily/weekly/monthly/quarterly for record keeping and the annual Audits.

Salary: R20 000.00 per month.
